Great go to sandwich for packed lunches, actually my go to sandwich in general… It is easy to make and super delicious.
Lets take a moment to appreciate chickpeas… They are a good source of iron, protein, and fiber. Chickpeas are awesome.
I came up with this recipe one day when I was really wanting a sandwich. I had tried a smashed chickpea salad sandwich before but on this particular day I didn’t have the ingredients in my house to make that recipe. So basically I threw whatever I had on hand into a bowl with some smashed chickpeas (including chopped pickles, my husband loves pickles so we always have some in the house) just to get my sandwich fix and it turned out good. I refined it over time, and now it is just plain delicious.
1 15oz can chickpeas, drained and rinsed
4 tbsp. Diced red onion
3 Tbsp chopped Dill pickles
2 tbsp. chopped chives
2 tbsp. Vegan Mayonnaise
1 tsp Stone ground mustard
1 Tbsp dill pickle juice
1/4 tsp Turmeric
1/4 Tsp paprika
1/4-½ tsp sea salt
¼ tsp black pepper
4 slices wheat bread (ensure vegan friendly)
4 slices tomato
Spinach or arugula
In a medium sized bowl smash chickpeas with a fork. Add onions, pickles, chives, vegan mayo, mustard, pickle juice, turmeric, paprika, salt, and pepper to chickpeas. Stir to mix
Toast wheat bread.
Top wheat bread generously with chickpea salad, tomatoes, and either spinach or arugula.
*Can store the chickpea salad in a sealed container in fridge for about 2-3 days.*
