I am all about simple and quick recipes lately. This Peach Cobbler only requires 8-ingredients, is easy, and can be make in under 30 minutes!
This satisfyingly sweet, perfectly portioned dessert, is made to serve two people, which makes it ideal for this upcoming Valentine’s Day!

Ingredients:
2 Small Fresh Ripe Peaches, chopped
1 Tablespoon Maple Syrup
1/8 Teaspoon Ground Cinnamon
3 Tablespoons Coconut Palm Sugar
4 Tablespoons Oat Flour
1/8 Teaspoon Baking Powder
Pinch of Salt
2 Tablespoons Vegan Butter, cold & cubed (or cold Coconut Oil)
Directions:
Preheat oven to 375°F
In a mixing bowl, stir chopped peaches, maple syrup, and cinnamon together.
Divide peaches between two 8-10 ounce oven safe porcelain ramekins.
In a small bowl, using a fork, stir coconut sugar, oat flour, baking powder, and salt together. Then add in cold cubed vegan butter. Cut vegan butter into sugar/ flour mixture, using the back of a fork, until a crumbly mixture forms. Divide in half and generously sprinkle over peach filled ramekins.
Place ramekins on a parchment lined baking sheet.
Bake at 375°F for 18-20 minutes or until cobbler is bubbly and crumble top is lightly browned.
Let Peach Cobblers cool on a wire cooling rack 8-10 minutes before serving.
Serve with Vanilla Bean Coconut ice cream and fresh peach slices, if desired.
