Okay… the pregnancy sweets cravings have started…HELP!
This is a super easy dessert recipe that only requires 8-ingredients! It is delicious cold or warm. I like it cold, so in the fridge mine goes. This is a great dessert to serve at dinner parties because it can be made ahead of time, and is, like I’ve said, super easy to make. Plus it looks super fancy served with a scoop of Vanilla Coconut Ice Cream, and drizzled with Vegan caramel sauce.

Ingredients:
1/2 cup + 1 Teaspoon Unbleached All Purpose Flour
1 Cup Coconut Palm Sugar
3 Flax eggs (3 Tbsp Flaxseed meal + 9 Tbsp Water, sit 5 minutes or until thickened)
1 Cup Vegan Butter, melted
2 Teaspoons Vanilla extract
1 Cup Mini Vegan Chocolate Chips (I like Enjoy Life brand the best)
1/2 Cup Chopped Walnuts
1 (9-inch) Store-bought Frozen Deep-Dish Pie Crust (ensure vegan friendliness)
Directions:
Preheat oven to 325°F
In a mixing bowl, whisk 1/2 cup all purpose flour, coconut sugar, flax eggs, melted vegan butter, and vanilla extract together until smooth.
Toss Chocolate chips in 1 teaspoon flour to coat.
Fold Chocolate chips and walnuts into filling.
Pour filling into pie crust. Place on a parchment lined baking sheet.
Bake at 325°F 50-60 minutes or until just set.
Let pie cool 15-20 minutes before cutting to serve.
Serve with Vanilla Bean Coconut ice cream and Vegan Caramel Sauce (I LOVE this 5 Minute Magic Vegan Caramel Sauce from Pinch of Yum)
