Bar-B-Q Jackfruit Sandwiches with Crispy Fried Onions (V, GFF)

Good-ole Texas barbecue, vegan style!

When I think of good Texas barbecue I think of Stubb’s Bar-B-Q sauce so I used some in this recipe. You can of course try this recipe using any vegan friendly barbecue sauce of your choosing (be sure to let me know if it’s super delicious with any other brand) but if you want it to taste like authentic Texas barbecue I highly suggest splurging for some Stubb’s Original Sauce.

I marked this recipe as Gluten Free friendly, the only thing you need to do in order to make this recipe Gluten free is use Gluten Free Burger Buns 🙂

Bar-B-Q Jackfruit

1 Tablespoon Pure Olive Oil

1 small Green Bell Pepper, chopped

2 10oz Packages Plain Jackfruit, packed in water (I use Upton’s Naturals Original Jackfruit)

1/2 Teaspoon Sea Salt

1/2 Teaspoon Onion Powder

1 Teaspoon Paprika

1 Tablespoon Coconut Palm Sugar

2 Teaspoons Yellow Mustard

3/4 Cup Stubb’s Original Bar-B-Q Sauce + extra for topping (Find it HERE)

4 Burger Buns

Crispy Fried Onions

1/2 Small White Onion, thinly sliced

3 Tablespoons Brown Rice Flour

1/4 Tsp Baking Powder

1 Tablespoon Gluten Free Soy Sauce

3 Tablespoons Water

Vegetable or Peanut oil for frying

Method:

Crispy Fried Onions; Pour 1/4- 1/2 inch coating of oil into a frying pan, place over medium heat. Whisk together brown rice flour, baking powder, GF soy sauce, and water. Toss onions in batter to coat. Once oil is heated fry onions in small batches for 30 seconds -1 minute each or until browned and crisp. Place fried onions on a paper towel lined plate to cool.

Bar-B-Q Jackfruit; Heat a large skillet over medium heat. Rinse jackfruit well and drain. Using a fork or fingers pull apart jackfruit into small “shredded” pieces, set aside.

Add olive oil and chopped green bell pepper to heated skillet, cook for 3-5 minutes or until bell pepper is tender. Add in pulled jackfruit, sea salt, onion powder, paprika and coconut palm sugar, toss well to coat jackfruit evenly in spices. Cook for 1-2 minutes or until warmed.

Lower heat to medium-low, add in Bar-B-Q sauce and mustard, stir and cook an additional 3-5 minutes or until bubbly and heated thoroughly.

Optional: Toast buns “Texas Style” by melting a pat of vegan butter in a pan over medium heat, once vegan butter is melted and bubbly, place buns in pan cut side down 1-2 minutes until toasted.

Generously pile Bar-B-Q Jackfruit on a bun, top with Crispy Fried Onions, extra Bar-B-Q Sauce, and serve.
