Is it just me or is Christmas creeping up faster than normal? I haven’t done ANY shopping for gifts yet!!! Sorry. Freaking out just a little. Fingers crossed I get all or most of my shopping done this weekend.
Simple, tasty, slightly spicy, and addictive… are just a few words I would use to describe these Spicy Artichoke Bites. This recipe makes 30, can easily be picked up and eaten mess free, so essentially a perfect hors o’devour to add to your Holiday party food spread.
This recipe is so easy and quick! Throw almost all ingredients into a food processor, blend until smooth, stir in some diced artichoke, roll out and cut puff pastry into squares, place in a mini muffin pan, add spicy artichoke filling, bake, cool, and devour.
I added some chives and extra Tabasco sauce on top of the ones I ate, so delicious, I really like spicy food though.
1 15oz can Cannellini Beans, rinsed and drained
1 Tablespoon Nutritional yeast
3 Tablespoon Panko Bread Crumbs
1/4 Teaspoon Salt
1/4 Teaspoon Garlic Powder
1/2 Teaspoon Italian Seasoning
1/4 Cup Onion, diced
1 Teaspoon Tabasco sauce
1 14 oz can Artichoke hearts, drained & divided
1 Sheet Puff Pastry
In a food processor, blend cannellini beans, nutritional yeast, panko bread crumbs, salt, garlic powder, Italian seasoning, diced onion, Tabasco sauce, and 1/2 the can of artichoke hearts. Blend on high until smooth.
Dice the remaining artichoke hearts, then stir them into the blended mixture.
On lightly floured surface, roll out sheet of puff pastry into a 10″x 16″ rectangle, then cut into 2″x 2″ squares *easiest way is with a pizza cutter*. Press puff pastry squares into a lightly greased miniature muffin pan, poke vent holes in bottom of crust with a fork, add a 1/2 tablespoon filling into each puff pastry.
Bake at 375°F 15-18 minutes, or until crust is cooked through and tops are golden brown.
Cool a few minutes before serving.
Optional garnishes; Chives, Tabasco sauce
