I kinda skipped over Thanksgiving themed food… I promise I will make it up to all of you by posting some great Christmas recipes but in the meantime here is my most favorite rice recipe!
This rice pairs great with enchiladas, fajitas, tacos, and beans. My favorite simple meal is this Spanish rice with black eyed peas (seasoned with chili powder, garlic powder, salt, and pepper) on top, SO tasty.

Ingredients:
1 Cup Uncooked Long Grain White Rice
1 3/4 Cup Vegetable Broth
1 Tbsp Vegan Margarine
1/2 Tsp Salt
1 Clove Garlic, Minced
1/2 Tsp Chili Powder
1 14oz Can Rotel (diced tomatoes and green chilies), slightly drained
Directions:
In a small sauce pan over medium high heat, bring rice, vegetable broth, and vegan margarine to a boil. Let boil about 5-8 minutes or until liquid reduces. Lower heat to medium. Stir in salt, garlic, chili powder, and rotel. Simmer 2-3 minutes. Remove from heat, cover, and let steam for 20 minutes.
Fluff rice with a fork, serve, and Enjoy!
