Blackberry Banana Bread (Vegan, GF, Refined Sugar free)

If you haven’t already noticed, one of my favorite things to do is make different variations of banana bread. Here is my latest and greatest; Vegan, Gluten-free, and refined sugar free Blackberry Banana Bread.

Banana bread is top on my favorite sweet treats list, not only because it is delicious but because I always tend to have a few bananas that end up getting a little too ripe before I get around to eating them. Especially because I am a weirdo that likes to eat my bananas when they are still a little bit green, I like that they are not very sweet and I also like the texture better than ripe bananas.

I recently learned some cool benefits of eating unripe bananas which made me like eating them even more (if that’s even possible). Unripe bananas are a good source of fiber, vitamins and minerals, contains a starch that may help control blood sugar, can manage weight and lower blood cholesterol levels, and also contain higher amounts of digestive-resistant starch, which is important for optimal gut health. Pretty neat, right? Maybe I’m not so much of a weirdo for liking green bananas after all.

2 Cups Gluten-free Baking Flour

1 Tablespoon Baking Powder

1/2 Teaspoon Salt

1/2 Teaspoon Cinnamon

1 Cup Coconut Palm Sugar

2 Flax eggs (2 tbsp flaxseed meal + 4 tbsp water)

1/2 Cup Coconut Oil

1 Teaspoon Apple Cider Vinegar

1 Teaspoon Vanilla

3 Ripe Bananas, mashed

6oz Blackberries

1 Banana, sliced lengthwise (optional)


In a medium sized bowl, mix together flour, baking powder, salt, and cinnamon, set aside.

In a large bowl, mix the coconut sugar, coconut oil, and flax eggs. Add in apple cider vinegar, and vanilla extract, mix until combined. Add the dry ingredients to the sugar mixture,  once combined stir in the mashed bananas.Then fold blackberries into batter.

Spread batter evenly into a bread loaf pan greased with coconut oil and lined with parchment paper. Press sliced banana into top of batter.

Bake at 350°F for 45-55 minutes or until a toothpick poked into the middle comes out clean.

Cool, Serve, and Enjoy!

Serves: 8-12
