I didn’t plan to create this recipe, It kinda just happened one day when I didn’t have a clue what I was going to eat for lunch that day. I pulled a bunch of veggies out of my fridge that I had on hand, and this is what I came up with. It’s such a simple recipe I wasn’t even planning on posting it, but after eating them… I enjoyed them so much that I just had to share. I hope you like these Veggie Avocado Club Sandwiches as much as I do!

Ingredients:
1 Avocado
1/2 Cucumber, peeled & sliced
1 Tomato, sliced
Romaine Lettuce
1 Tbsp Vegenaise
Salt
1/4 Tsp Crushed Red Pepper Flakes
4 Slices Wheat Bread (My favorite is Eureka saaa-wheat bread)
Directions:
Toast bread. Spread on veganaise, smash on avocado (half per sandwich), sprinkle on red pepper flakes & salt. Then, pile on cucumber, tomato, lettuce. Top with the other slice of bread. Cut and serve.
