This sandwich is:
“Cheesy”
Flavorful

Slightly Spicy
Tasty
Satisfying
And packed with veggies!
Slice peppers and onion.
In a skillet over medium-high heat cook the veggies in olive oil 8-10 minutes.
Pile veggies on top 4 slices of the potato bread.
Sprinkle with a blend of Mozzarella style shreds and Cheddar style shreds.

Ingredients:
1 Red bell pepper, sliced
1 Yellow bell pepper, sliced
1 Poblano pepper, sliced
1/2 White onion, sliced
1 Tbsp Olive oil
1/4 Tsp Salt
1/2 Tsp Cumin
1/8 Tsp Cayenne pepper
Mozzarella style shreds (I use Daiya brand)
Cheddar style shreds
8 Slices Vegan potato bread
Directions:
In a skillet over medium-high heat cook the veggies in olive oil 8-10 minutes or until softened and onions are slightly caramelized, stirring occasionally. Add salt, cumin, and cayenne to veggies, stir and cook another minute. Remove from heat.
Pile veggies on top 4 slices of potato bread sprinkle with a blend of Mozzarella style shreds and Cheddar style shreds, top with remaining slices of potato bread.
Cook the sammies on a panini press for 6mins, or on a stove top grill over medium-high heat for 3 minutes on each side or until bread is crispy and cheese style shreds are melted.
Makes: 4 Sammies
