I am super excited about sharing this recipe. It is the first vegan recipe I came up with… because as a new found vegan (1 1/2 years ago) I couldn’t imagine living a life without really good banana bread. Who would want to?
I made this right before leaving on a road trip to Vegas this past weekend and of course brought what was leftover with me to munch on in the car. It’s makes for a pretty yummy breakfast, I’ve got to say I think I prefer it over muffins…
I’m delightfully surprised at how many vegan food restaurants we (Husband and I) had the option of going to along the way to Vegas. We stopped in La Cruces, NM for lunch at a charming little cafe called Mountain view cafe located inside a health food market, and ordered a smorgasbord…Bbq bacon burger, Diablo red noodle bowl, egg-less rolls, and samosas (yeahhh our eyes were way bigger than our stomachs) from a super cool 100% vegan restaurant “Green vegetarian” downtown Phoenix, AZ for dinner & Nami Bakery Donuts for breakfast the next day, plus a few more places along the way and in Vegas as well… It was all so amazingly delicious. I’m just so extremely happy about the vegan community growing and of course there being so many more restaurant options!
Anyway, I hope you enjoy this recipe!
2 Cups Unbleached all purpose four
3 Tsp baking powder
1/2 Tsp Salt
1/2 Tsp cinnamon
1 Cup Organic pure cane sugar
1/2 cup virgin coconut oil
1/4 cup unsweetened apple sauce
1 Tbsp fresh lemon juice
1 Tsp vanilla extract
3 Ripe Bananas mashed
2 cups Fresh Blueberries
1/2 Tbsp Flour
Preheat oven to 350°F
In a medium sized bowl mix together Flour, baking powder, salt, and cinnamon, set aside. In a large bowl combine the sugar, coconut oil, apple sauce, lemon juice, and vanilla extract, mix well. Add the dry ingredients to the sugar mixture, once combined stir in the mashed bananas, mix well. Rise blueberries and pat dry, toss with 1/2 Tbsp flour then fold into batter.
Spread batter evenly into bread loaf pan or a 7×11 glass baking dish (if you are wanting the texture to be more like a cake) greased with coconut oil.
Bake for 45 minutes or until a toothpick poked into the middle comes out clean.
